How to Scale Any Recipe Up or Down

Doubling a dinner recipe is straightforward; doubling a cake is not always. Learn linear scaling rules, pan-size adjustments, and seasoning pitfalls.

Scaling a recipe means changing every ingredient by the same factor so flavours and textures stay balanced. Feed four instead of eight? Multiply each quantity by 0.5. The arithmetic is simple — the craft is knowing when straight multiplication works and when oven time, pan geometry, or leavening agents need separate adjustment.
The basic scaling factor
Scaling factor = desired servings ÷ original servings. A recipe written for six that you want to serve nine uses a factor of 1.5. Multiply every ingredient — flour, milk, salt, oil — by that number. When linear scaling works well
Soups, stews, curries, pasta sauces, and most stovetop dishes scale linearly. Salt and spice can be added gradually at the end — start with 80–90% of the scaled amount and taste. Oven temperature usually stays the same; only time and vessel size change for baked goods.
Baking needs extra care
Cakes, cookies, and bread depend on surface-area-to-volume ratios. Doubling a batter and pouring it into one large pan produces a thick centre that may bake unevenly. Better options: use two original pans, choose a pan with roughly double the area, or increase oven time modestly while checking doneness early. Yeast and chemical leaveners (baking powder) scale with the recipe, but very small batches sometimes need slightly more leavening per gram of flour because gas escapes faster from thin batters.

Frequently asked questions
Do I scale oven temperature?
Usually no. Keep the stated temperature and adjust time, pan size, or batch count. Very thick scaled-up loaves may need a slightly lower temperature and longer bake to avoid burning the crust.
Should I scale salt exactly?
Salt scales near-linearly, but palates vary. Scale to 90%, finish the dish, then adjust. Cured meats and stock concentrate may already be salty.
Can I scale baking powder and yeast the same way?
Mostly yes for moderate scaling (0.5× to 2×). Beyond that, watch rise height and consider splitting into multiple pans.
What about egg sizes?
Standard recipes assume large eggs (~50 g each). If scaling lands between whole eggs, round to the nearest practical count or beat one egg and measure by weight.
