Rice to Water Ratio Explained by Type and Method

White long-grain rice is not 2:1 for every pot. Grain type, age, altitude, and vessel change the water you need.

Rice cooking fails when water is wrong — mushy from excess, crunchy from too little. Ratios express volume or weight of water relative to rice. Package labels often say 2 cups water per 1 cup rice, which works for some US long-grain white rice but misleads for brown, basmati, or old dry grains.
Common starting ratios
- White long-grain (stovetop): 1:1.5 to 1:2 water to rice by volume
- Jasmine / sticky white: 1:1.25 to 1:1.5 — less water, shorter cook
- Basmati: rinse well, soak optional, 1:1.5 — separate grains
- Brown rice: 1:2 to 1:2.5 — bran layer needs longer absorption
- Rice cooker: often 1:1 to 1:1.2 for white — cooker seals reduce evaporation
Why rinsing and soaking matter

Stovetop absorption method
- Rinse rice until water runs mostly clear
- Combine rice and cold water in a heavy pot
- Bring to boil, stir once, cover, reduce to lowest simmer
- Do not lift lid for 15–18 min (white) or 40–45 min (brown)
- Rest off heat 10 min, fluff with fork
Frequently asked questions
Why is my rice mushy?
Too much water, lid lifted too often, or heat too low causing extended simmer. Reduce water slightly next batch.
Why crunchy on bottom?
Insufficient water or heat too high evaporating water before centre cooks. Lower flame after boil.
Does altitude affect ratio?
Yes — water boils cooler at altitude; rice may need slightly more water and longer time.
Cup rice cup water — same cup?
Use the same measuring cup for both, or switch to grams for better repeatability.
